Blake and I had reubens for lunch!  I haven’t had one in so long and I have been trying to switch things up for lunch.  This sandwich really hit the spot.  If you’ve never had a reuben, you probably think that the combination of ingredients sounds awful, but trust me, it’s delicious!

I also had a side of fruit.   Great lunch!




Rye bread

Corned beef (I like it sliced extra thin)

Swiss cheese


Thousand Island dressing

Spread thousand island dressing on rye bread, add cheese, corned beef, saurkraut, then more cheese.  Top with another piece of bread and use a panini press to heat through.

  2. I put coleslaw on mine because I don’t like sauerkraut…. Mmmmm… Love Rachels! Thanks, now I know what’s for dinner tonight!
