Poor Man’s Caviar
- 1 can shoepeg can, drained
- 1 can black eyed peas, drained
- 1 can black beans, drained
- 4 oz. jar pimentos
- 4 oz. can jalapenos
- 2 stalks celery
- 1 small red onion
- 1 cup olive oil
- 1/2 cup cider vinegar
- 1/2 cup sugar
Combine corn, black eyed peas, black beans in a large bowl. Place celery, red onion, jalapenos, and pimentos in a food processor and pulse until all ingredients are chopped. Add to large bowl.
In a small saucepan, combine oil, vinegar, and sugar. Warm until sugar dissolves. Pour over bean mixture and mix well. Marinate for 24 hours in the refrigerator.
Remove bean mixture with a slotted spoon and serve with tortilla chips.

and lobster tails.This was my first holiday meal hosted and I was proud that there were no major mishaps. We may have started a new holiday tradition. These girls are sure to make Christmas special every year.
A lot of people have been commenting how big Avery is, especially compared to Macy as a baby. I find this amusing because even though Macy has always been on the petite side, she was still a pretty chubby baby.
Looking through all these pictures made me miss baby Macy. Good thing I have another baby to snuggle with, or I would have caught baby fever in a bad way 😉
We had a fun playdate with our friends this week. I always look forward to seeing my friend, Lynn, and her little boy, Octavian. Macy and “Tav” (as she calls him) had fun destroying our living room and then jumping on the bed.
The months are flying by… happy four months little girl!
We went to see Santa this past week, and Macy acted like they were old friends. We were shocked, but happy that she wasn’t scared like last year. She had a full conversation with him, and told him exactly what she wanted. I think he came through with all of her requests today 🙂 She was definitely on the nice list this year!
