poor man’s caviar

Poor Man’s Caviar

  • 1 can shoepeg can, drained
  • 1 can black eyed peas, drained
  • 1 can black beans, drained
  • 4 oz. jar pimentos
  • 4 oz. can jalapenos
  • 2 stalks celery
  • 1 small red onion
  • 1 cup olive oil
  • 1/2 cup cider vinegar
  • 1/2 cup sugar

Combine corn, black eyed peas, black beans in a large bowl.  Place celery, red onion, jalapenos, and pimentos in a food processor and pulse until all ingredients are chopped.  Add to large bowl.

In a small saucepan, combine oil, vinegar, and sugar.  Warm until sugar dissolves.  Pour over bean mixture and mix well.  Marinate for 24 hours in the refrigerator.

Remove bean mixture with a slotted spoon and serve with tortilla chips.
