spicy sausage pasta

Last night, I tried out a new recipe from Pinterest for dinner.  The original can be found here.  I liked it a lot and Blake couldn’t stop raving about how delicious it was.  I’m pretty sure he went back for thirds!  It was a little too spicy for my kids, but they are sensitive to spicy things, so some kids may like it.  It was a relatively easy, yummy dinner that I’ll definitely be making again.

Spicy Sausage Pasta

1 tbsp olive oil
1 lb smoked sausage
1.5 cups diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 (10 oz) can Rotel tomatoes and green chiles, Mild
1/2 cup heavy cream
8 oz pasta (i used campanelle, but penne would work great too)
1/2 teaspoon salt and pepper, each
1 cup Monterey Jack cheese, shreddedphoto (7)

1.Add olive oil to a large skillet over medium high heat until hot.  Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.

2. Add broth, tomatoes, cream, pasta, salt and pepper and stir.  Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.

3. Remove skillet from heat and stir in 1/2 cup cheese. Serve, topping with remaining cheese.

  1. Rita I stole this from your pintrest page a few weeks ago and it was a huge hit here too. Tony loves rotel tomatoes in anything though. It’ll definitely be added to our rotation.
